PB n J Fat Bombs

I am sure you have heard about the Fat Bomb craze! If you haven't you really need to get out more! ;)

These little melt in your mouth deliciousness are usually loaded with fat- rich ingredients like coconut oil.  They tend to fill you up fast and satisfy your sweet cravings too! 

I call that a Win-Win!

Think of them as energy bites that melt in your mouth!! I am salivating just thinking of them! 

As a kid I loved having PB n J sandwiches - you gotta remember these too?  Always best on fresh white bread too lol 

Now if you are anything like me and are focused on your wellness white bread is a thing of the past! Or at the very least something you might indulge in rarely.  

We all know that white bread turns into sugar in our body and then causes chaos!  It spikes your blood sugar resulting in a crash a short time later and then followed by the "need" to do it all over again!  Its just really not worth it! At least for me its not especially when I can make a better choice like these PB n J Fat Bombs!  So I wanna help you get off the hamster wheel of spikes and crashes and share this recipe!

I spent some time in the kitchen trying to create a healthier version of the classic PB n J and I must admit I surprised myself with this one!  These are only 6 ingredients and since they are low carb they make a great keto snack for anyone following that.

I do want to mention that if you are trying to lose weight you should use moderation with any fat bombs.  They are meant to have as a quick snack or pick me up- not to sit and eat the whole container!  That will derail your weight loss efforts. 

These ones are so good that I am warning you that it might be hard to stop at one!

Ok enough of the chit chat- lets get to the recipe!

Ingredients you will need:

1/3 cup Coconut Oil

1/2 cup Nut Butter- I used Natural Peanut Butter but Almond Butter would be delicious too

6 tsp Jam (but this depends on how many you make- you need a tsp per bomb) I used Crofters.

1/2 tsp Vanilla

1/4 tsp Sea Salt 

1 tbsp Maple Syrup

Directions:

Melt the coconut oil in microwave safe bowl, or on stove top.  Whisk in nut butter, maple syrup, vanilla extract, and sea salt.

Pour half the mixture into silicone molds ( i used these muffin molds).  Chill in fridge until hard about 15minutes.

When they are hard- add 1 tsp jam to each center of the pb cups.  Then spoon remaining peanut butter mixture over top.  Chill in fridge for 20 more minutes until fully set.

I keep in fridge or freezer and take one out as needed.  I also cut mine in quarters because the mold I used was bigger.

 * I also doubled the coconut oil/peanut butter mixture. This will depend on how big your molds are.
