Homemade Beef Barley Soup

It's officially soup season around my house!
There is nothing better than a bowl of homemade soup on a chilly day!

I personally love Beef Barley the most and just made it again so decided to share with you all.

It's so easy to make and very forgiving with amounts and ingredients. Often I "wing it" and throw any vegetables I have on hand too.

You can taste it as you go and adjust as needed. This is one of the Beef Bouillons I like to keep on hand- https://loom.ly/Boy_iqE but you can use a liquid one as well.

I love to make this soup when I have leftover roast beef, but you could also use stewing beef etc.

Did you know that barley has significant health benefits? It's filled with so many nutrients, a source of insoluble and soluble fiber which will help with digestion, may even prevent gallstones and will reduce hunger and has beta-glucans that help lower cholesterol.
If you deal with digestion issues I do suggest you soak the barley first to improve the absorption of nutrients.

Here's my recipe-

Ingredients-

Water- 3 litres
Diced Tomates x2
Beef Bouillon
Dried Basil-1tbsp
Bay Leaves x2
 
Carrots x2 Medium
Celery x2 stalks
Onion- 1 large
Green Pepper- 1 small
Barley - 1/2 cup
Beef- As much as wanted
 
Using a Dutch Oven or a big Pot fill with water. Add in canned diced tomatoes, beef bouillon. Add in chopped vegetables, dried basil and bay leaves Cube leftover cooked beef and add Let simmer. The longer you simmer the better flavour. Feel free to add in other vegetables too- I often will add peas and corn. Be creative! Serve with fresh bread. Store in fridge and reheat for 4 days.
