Why is Sourdough better for us?

Sourdough is much easier for us to digest and tends to be easier on the digestive system as a whole- even for people with gluten sensitivity issues and this is because of the fermentation process.  It's also packed with nutrients!  It has several B vitamins, vitamin E, zinc, phosphorus, and magnesium.  Phytic acid which is an "anti-nutrient" is already broken down due to the fermentation process and this means better digestion and absorption.  We can't forget about the prebiotics in sourdough that feeds our intestinal flora to help them flourish and thrive!
